Kids' Turkey Curry
Essential Ingredient:
Turkey Breast Fillets
1 tbsp sunflower oil

2 tap mild curry paste

3 turkey breasts chopped into pieces

2 sweet potatoes, peeled and chopped

6 tablespoons split red lentils (rinsed)

200ml chicken stock

400ml can coconut milk

A couple of handfuls of frozen peas

A handfuls of washed spinach (optional)

To serve:
Serve with fluffy rice

A simple child-friendly dish that gently introduces children to spicy food.
  1. Fry the turkey in the hot oil until browned
  2. Add the curry paste, and keep cooking for two minutes
  3. Add the sweet potatoe and lentils and stir
  4. Pour in the stock and coconut milk
  5. Bring to the boil and then simmer for 25 minutes or until the sweet potatoe is soft
  6. Add the peas and spinach 5 minutes before serving
