Leftover turkey hoisin sauce wraps
This recipe was sent to us by Filipa, one of our online blogger mums. Her challenge was to cook a meal using turkey leftovers. Here's what she thought:

This is a cracking little recipe for your leftover turkey this Christmas. Think of crispy duck and pancakes, scale it up to a wrap, and swap the duck for leftover turkey. It's incredible. 
Essential Ingredient:
Leftover turkey
8 wheat tortillas wraps

350g leftover turkey, shredded or chopped

8 tablespoons hoisin sauce

6 tablespoons water

6-8 spring onions, topped and tailed and sliced

Whole cucumber, peeled and cut into batons

Couple of handfuls of salad leaves (optional)

To serve:
Serve with fresh salad.
This turkey recipe puts your Xmas leftovers to great use.
  1. Warm the tortillas in the microwave or the oven and cover with a clean damp tea towel to keep them warm while you prepare the leftover turkey filling
  2. Place the leftover turkey in a frying pan along with the hoisin sauce and water. Slowly bring to the boil and reduce the heat to a simmer. Cook for around 5 minutes stirring frequently until the leftover turkey is coated with a sticky brown sauce that has reduced
  3. Evenly distribute the hoisin turkey onto the warm wraps followed by the spring onions, cucumber and salad if using. Roll up the wraps tightly, slice each in half and serve immediately.
