Lemon and pesto gnocchi with turkey
This recipe was sent to us by Katie, one of our online blogger mums. Her challenge was to cook a meal using turkey leftovers. Here's what she thought:

What we thought:
Sam came in from his Karate class and wolfed his bowlful down in an instant! I can’t recommend this dish highly enough for ravenous children who are in need of an easy meal they can devour by the forkful. 
Essential Ingredient:
Leftover turkey
2 x 500g packets fresh gnocchi

2 handfuls frozen peas

1 lemon, zest

4 tbsp pesto

knob of butter

2 handfuls of leftover roasted turkey meat, shredded

freshly grated parmesan

To serve:
Serve with freshly grated Parmesan
This turkey recipe is a very quick, cheap and easy weeknight supper.
  1. Bring a large pan of salted water to the boil, then add the gnocchi and frozen peas and stir. Allow to simmer until the gnocchi rises to the surface
  2. Drain then return to the pan and add the lemon zest, pesto, butter and shredded turkey meat. Toss to thoroughly combine and then serve into bowls with plenty of freshly grated parmesan.
