Lemon Turkey Pappadelle Pasta
This recipe was sent to us by Cass Bailey, one of our Blogger Mums. Her challenge was to cook a low fat/healthy meal for the family for under £10. Here's what she thought:

What we thought:
It tasted lovely and genuinely took about twenty minutes from starting it to getting the bowl to on the table. Everyone loved it and my daughter went back for seconds as she enjoyed it so much! It's affordable, delicious and also something I can make easily after work.
 
Essential Ingredient:
Turkey Breast Fillets
Ingredients
Turkey (leftovers, cooked, uncooked – whatever you have)

Pappadelle pasta

Pancetta

3 tablespoons of lemon mayonnaise (either shop bought or homemade)

Chives

Mixed herbs




To serve:
This tastes lovely and summery – perfect after a weekend of BBQs.
Method
  1. If you’re using raw turkey, cut into small chucks and gently fry in some olive oil, add the pancetta cubes and continue cooking until the turkey is cooked and the pancetta is crispy. If you’re using cooked turkey, add that to the pan shortly after the pancetta and cook until the pancetta is crispy and the turkey has been properly heated through
  2. In a large pan of salted boiling water, add your chosen pasta and cook according to the instructions
  3. While the pasta is cooking, you can make your homemade lemon mayonnaise if you’re using homemade. Mix together the juice of half a lemon, half a teaspoon of lemon zest, some chopped fresh chives and 3 tablespoons of mayonnaise
  4. When the pasta is cooked, mix everything together in a large bowl and you’re ready to go.
