Thai Style Bites
Essential Ingredient:
Turkey Breast Fillets
225g of cooked skinless turkey

2 shallots

1 garlic clove

1 level tsp Thai red curry paste

1 stalk lemongrass with outer leaves removed (optional)

A handful each of fresh coriander and basil

3 eggs

Juice of 1½ limes

Low-calorie cooking spray

Salt and freshly ground black pepper

To serve:
Coriander leaves to garnish
This recipe from Slimming World. is free on Extra Easy and Original and 5 Syns on Green.
  1. Place the turkey in a food processor and whizz until well minced
  2. Add the shallots, garlic, curry paste, lemon grass (if using), herbs and lime juice
  3. Whizz the mixture until quite fine and combined
  4. Add the eggs and mix thoroughly, then season well with salt and black pepper, and whizz again
  5. Transfer to a bowl
  6. Spray a large heavy-based frying pan with low-calorie cooking spray, then scoop up a dessert spoonful of turkey mixture and place in to the pan
  7. Do this in batches and cook for 2 mins on each side until browned, then cook for a further 4-5 mins.
