Turkey and Apricot Burgers
Essential Ingredient:
Turkey Mince
1 tbsp olive oil

1 red onion, finely chopped

1 garlic clove, crushed

2-3 sprigs fresh thyme, leaves picked

500g turkey thigh mince

7 dried apricots, finely chopped

50g fresh breadcrumbs

To serve:
Serve with potatoe wedges and salad.
The ready-to-eat apricots in this recipe give a lovely smoky sweetness.
  1. Heat the oil over a medium heat then saute the onion and garlic until softened, about 5 minutes or so. Add the thyme leaves and continue to cook for a couple of minutes
  2. Transfer the onion, garlic and thyme to a bowl then add the remaining ingredients, mixing thoroughly and adding seasoning if you want to
  3. If you have time you could pop it in the fridge for a bit at this point to firm them up
  4. Shape into 8 burgers (it helps if you have wet hands for this bit) and grill for 6-7 minutes on each side
