Turkey Ham Citrus Salad
Essential Ingredient:
Turkey Breast Fillets
2 large oranges

170g cherry tomatoes

275g fresh pineapple chunks

2 tbsp fresh mint

Freshly ground black pepper

120g bag mixed leaf salad

170g lean turkey breast slices

To serve:
Warm crusty bread.
This recipe from Slimming World. is free on Extra Easy and Original and 2½ Syns on Green.
  1. Cut the top and bottom off the oranges and use the knife to remove the skin and white pith
  2. Cut in between the segments and lift out orange pieces.
  3. Do this over the salad bowl to collect the juice
  4. Halve the cherry tomatoes and mix together with the orange pieces and the pineapple chunks in the salad bowl
  5. Stir in the chopped mint and season to taste with black pepper
  6. Add the mixed leaf salad and toss the ingredients together in the juice from the oranges
  7. Arrange the slices of turkey on the top and serve.
