The Secret to Using Every Last Bit of Leftover Roast
If you’ve just had a huge roast dinner and afterwards are left with a table full of half-finish turkey carcass, untouched mashed potato and rogue Brussels sprouts, here’s our guide to using up your leftovers effectively.
The Turkey
The turkey is of course, the big one. This is where a lot of your leftovers will come from. If you have a look around the site you'll find we have lots of great recipes for leftover turkey. We've also talked before about the best ways of storing leftover turkey.

However, if you’re looking for a quicker and easier way to get more out of your turkey leftovers there is a neat trick we left out.

Sticking it in a blender.

If you reheat your turkey, then take it off the bone and stick it in a standing mixer with a cookie paddle attachment, then run it for 20 seconds on a 4-6 setting, you’ll end up with fantastic shredded turkey meat that’s perfect for sandwiches, fajitas or Mexican dishes.

Another great trick for when you’re reheating turkey is to place a damp paper napkin over it beforehand. This will mean that the meat is lovely and moist when it comes out.
Cranberry Sauce
Homemade cranberry sauce is the eternal and classic accompaniment to a roast turkey, but it’s not famous for going with a huge number of other things. A great way to use up the leftover cranberry sauce is just to mix it up in a cocktail. One part cranberry sauce, to one part amaretto and one part bourbon, mixed up with some ice and shaken well in a cocktail shaker, then topped off with ginger ale and a slice of lime, makes for a delicious and refreshing drink that’s perfect for Boxing Day or a Sunday evening.
Mashed Potato
Mashed potato is one of those things where you always seem to make not enough or way too much, and you don’t want to have made not enough. But left to its own devices mashed potato dries out quickly, so you've got to work fast to store it. Give it a bit of time to cool, then put it in a sealed container in the fridge or a seal-able freezer bag in the freezer.

When the time comes to use it, take it out of the fridge or freezer, give it time to defrost if necessary, then add a knob of butter to the mix and heat it in a microwave oven.

The reheated mash can be used for all sorts of recipes, such as the topping on a shepherd’s pie or fish pie, or, once its cooled, mixed with tinned tuna or salmon to make fish cakes. That’s just the beginning though, look around and there’s all sorts of uses for a bit of spare mash.
